Lunch: WH is on the low-carb diet and sick of eating nothing but meat, so I made a really yummy egg salad to serve on cucumber slices. Decided to eat some of the same thing because
Snack: Some sort of chicken and bean enchilada type concoction. Quite tastey. I was still feeling lazy and hungry, so I raided the freezer and saw a 9x13 pan from our last freezer swap. Having no memory what it was, but not really seeing any other convenience foods in the freezer, I popped it in the oven. 40 minutes later, I made the pleasant discovery of enchiladas and chowed down. Nothing like cooking up a mystery for a snack. Don't worry, I only ate 1, not the entire pan. Wonder if the big kids would eat some if I served it for supper. Finished it off with soda and ice-cream because old and delicious habits die hard - estimated 720 calories.
Supper: Another enchilada. Kids didn't go for it as hoped, though Tiny ate a bit. Really wanted brownies or cheesecake for dessert, but in an attempt to see if I could be lazy and healthy at the time, I made peanut butter balls with toasted quinoa and raw local honey. Only took a few minutes and were surprisingly good, but not exactly sweet, which disqualified them as dessert in my opinion. Another stupid soda to wash it down with. Remind me to never keep root beer in the house - estimated 670 calories
